A tub of arugula/spinach, baby kale, or any other deep greens
1/3 Cup goat cheese, in pieces
1/3 Cup pumpkin seeds, lightly toasted in a dry pan until golden
half a lemon, squeezed
3 TBSP olive oil
1/2 tsp sea salt
lots of fresh black pepper
Arugula is packed with the most calcium of all the salad greens, and antioxidants Vit K, C, A and manganese. Pumpkin seeds are also rich in antioxidants, fibre, good fat, protein, and give this salad a delicious crunch.
